Asparagus Frittata is maybe the most common way to cook this delicious vegetable. Even though in the past years I had already appreciated the combination between asparagus and eggs, I’d never made frittata before. So, last week I tried and… what a taste! Sometimes the easiest things are also the tastiest! And if you use the oven instead of the pan you will also have a light recipe 😉

Ingredients for 2 servings:
200 g of asparagus
250 g of grana
Preparation Time: 10 min
Cooking Time: 10 min
Total Time: 20 min
Chop onion, let it wilt in a pan with some oil. Then cut asparagus in pieces and add them into the pan. Season to taste and cook for a couple of minutes.
Turn off the gas and let cool down.
In a bowl, beat eggs with cheese, salt and pepper.
Then add asparagus and stir.
Pour the mixture in the pan with some oil, and cook for a couple of minutes.
Gently turn frittata upside-down with a couple of spatulas, and cook the other side as well.
Decorate with a few asparagus tips and serve hot.
