Last week I found at the supermarket these amazing zucchini flowers… I also had shelled prawns, so I decided to combine them, together with a batter. Do I have to say how good they were? 😛
There is plenty of different batters for frying vegetables, the classic one with flour and egg, the one with sparkling water or wine, or even the one used for tempura… When I fry vegetables, and especially zucchini flowers, I usually prefer beer batter, light, fragrant and aromatic. Ingredients for the beer batter:
120 g of flour
200 ml of beer
1 tbsp of seed oil
10 g of salt
Preparation Time: 15 min
Cooking Time: 10 min
Total Time: 25 min + 30 min for marinade
Marinade 30 minutes prawns with garlic in pieces, oil, and a pinch of salt.
Meanwhile, let’s make beer batter.
Put flour in a bowl.
Slowly add beer, while stirring with a whisk.
Then add salt and oil, and combine evenly.
Once ready, wash and clean zucchini flowers, by removing stem and pistil.
Drain prawns from their marinade, and put one inside each flower.
Put one at a time inside the batter.
Then pan-fry your battered flowers in hot seed oil.
1-2 minutes per side will be enough.
Once nicely golden, let them dry on some blotting paper before serving.
