I’ve always loved Chocolate Lava Cake, but I’ve never been able to make it: I’ve tried 2 disappointing recipes, and had cooking issues another time… So I had given up!
A few nights ago I was at my mum’s for dinner and I decided to try and make it again… with this recipe. The main issue seemed to be the cooking time. I was felting so anxious that I decided this would be my last attempt! When I put them in the oven I crossed my fingers and stayed there, looking at them through the oven glass, trying to catch the right moment to take them out… I took the first one out, take my camera, immersed the teaspoon, and… ta-da! Here it was, my melting heart! I took all the other ones out of the oven and while I was serving them, and eating them, I saw the melting chocolate coming outside… and my eyes were shining!
My parents had never tasted this dessert, and they were enthusiastic as well, when they saw the creamy, chocolatey, delicious heart: They looked at me as if I had done magic, and I felt like a super star 😀
You could make them in advance, store them in the freezer and cook them at the end of a meal, maybe to surprise your partner on a Valentine’s Day… or even just tu cuddle yourself a little with a yummy pastry 😉

Ingredients for 8 small cakes:
200 g of dark chocolate
180 g of butter
160 g of sugar
40 g of pastry flour
Lithium online plain cocoa
Preparation Time: 20 min.
Cooking Time: 15-18 min.
Total Time: 40 min. + 1 hour in freezer
In a heavy-based saucepan, melt butter and chocolate in pieces.
Move the mixture into a bowl, and add in the sugar.
Now you can add eggs, once at a time: amalgamate completely befor add another one.
At last, stir in the flour.
Grease the baking cups and spread them with cocoa (this is a crucial step, as if not done carefully, once you will try to turn the cakes upside-down they will stay stuck to the cups, and possibly break too).
Now divide the mixture into the 8 cups (fill each till half height or a little more).
Now leave the cups in the freezer for 1 hour, so that the surface will freeze.
Turn on the oven at 200°C, and, once hot, bake the small cakes for about 15-18 minutes.
Cooking times are absolutely approximate and may vary according to the oven, so check them, or you’ll risk not to get your melting heart. You’ll know when they’re ready when you’ll see thet the outside is firm to touch, but if you move the cups the cakes seems to be slightly squidgy.
You may want to quickly try one before taking them all outside the ove.
So you can now take all your small cakes out of the oven, turn them upside-down on a plate, sprinkle with icing sugar and serve!
And here you have your melting heart!
