Artichokes are an integral part of Mediterranean diet. So, kowing how to clean them is important.
First and foremost, before starting to do anything, you should get kitchen gloves. Otherwise, in first place your hands would turn black, and in second place the thornes of the outer leaves might bite you.
Important note: do not worry about discarding, because you can only eat the tender part of your artichokes. Of course, it also depends on how are you going to cook them, as for boiled artichokes you can eat almost all the parts.

Start to clean the artichokes by removing the outer and tougher leaves.

Cut off the tops of artichoke leaves.

With a knife, peel away the tough outer layer of the stem.

Then cut the artichokes into thin slices, and remove the internal hairy part.

Put the slices in a bowl with water and some lemon juice, and let rest for about 20 minutes.

Now drain the artichokes and use them according to the recipe you’ve chosen.
