Crema catalana, also called Catalan cream burnt cream, is a creamy dessert typical of Spain, especially of Catalonia.
It is quite similar to crème brûlée (this will be my next creamy dessert).
During my vacation in Spain I appreciated Crema Catalana a lot, also in ice cream and cakes… it’s delicious! Today you finally have my recipe to make it.
Ingredients for 4 servings:
500 ml di milk
100 g of sugar
2 tbsp of corn starch
1 stick of cinnamon
1 lemon zest
Preparation Time: Indocin no prescription 25 min
Baking Time: 5 min
Total Time: 30 min + 4 hours in the fridge
Put in a saucepan milk with lemon zest and cinnamon, and bring to a point of boil.
Let simmer for a dozen minutes.
In a bowl, whisk yolks with sugar and starch.
Sift milk and slowly add it to eggs. Toss to combine.
Place the mixture into a saucepan and cook for about 5 minutes, while continuously stirring.
Divide the custard into 4 ramekins, let cool down and refrigerate for at least 4 hours.
At the last moment, spread the surface with brown sugar and a pinch of nutmeg, and grill in oven for a few minutes, untill sugar on the top will have caramelized.
You’ll get a delicious Crema Catalana, with a crunchy caramel crust and a soft custard heart 😛
