This is the base recipe to make great crêpes: you can stuff them both with salty or sweet fillings. You can make them in advance and store them in the fridge (just warm them up a few seconds in a pan before stuffing according to your taste). The most popular fillings are Nutella or jam for sweet crêpes, and ham, or ground meat, and mozzarella for the salty ones.

Ingredients for 8 crêpes:

How to make Crêpe Batter

Mond the flour in a bowl, make a well in the middle and slowly incorporate the milk, whisking till you get a smooth mixture, without lumps.

Aside, beat the eggs with a fork, then add them to the batter and stir.

Amalgamate well till you get a fluid and smooth batter.

Cover with some plastic wrap and refrigerate for about 30 minutes, so that the flour will releas all of its starch.

Get the batter and stir again.
Melt a knob of butter in a large nonsticky pan, then pour a spoonful of batter.

Recline and rotate the pan to distribute the batter evenly.

Cook each side of each crêpe for about one minute, turning them upside-down with a spatula.

As your crêpes are ready, pile them on a dish.
