Deep-Fried Artichokes can be made in different ways. You can blanch them in acidulated water (just add some lemon juice to the hot water), and then fry them. You can marinate them in water and lemon juice, and then fry them. Or you can pass them in some beated egg, or in a batter, and then fry them… At my home that’s how we use to make them: “indorati e fritti” (that is to say: passed in flour and in beated egg, and then fried) 😛
Sometimes I wander if I should really post these simple recipes, but I still remember the time when I was beginning to approach to the cooking world, and I could not make some recipes, maybe because I had no idea of how to clean the needed vegetables… Well, I’ll post them anyway, somebody could still find them useful 😉

Clean the artichokes by removing the outer and toughest leaves.
Cut away the tops of the leaves, and trim the stem end.
Finally cut the artichokes into thin slices.
Beat the egg with salt and pepper. Now pass the slices in the flour and then in the beated egg. Then fry them in hot oil.
Let them get brown, then lift them with a perforated spoon, let them drain on some blotting paper, and serve hot.
