Duchess Potatoes (in French pommes de terre duchesse) are a typical French side dish: a recipe quite easy and eye-catching. I’ve told several times to my spouse I wanted to make Duchess Potatoes, but he has always answered they are pointles and tasteless… But yesterday I made them by surprise, and when he tasted them he stayed in silence… and he wolfed down all of them! Ahhhh husbands… 😉

Cooking Time: 55 min.
Total Time: 1 hour 10 min.
Cook the potatoes in a large pot with salted water for about 40 minutes from the boil point (to check if they’re ready, try one with a fork: if there is no resistance till the center, it’s done).
Once ready, peel them and mash them with a potato masher. Make a mound of mashed potatoes in a bowl and make a well in the middle.
Add butter in pieces, salt, and grated nutmeg and parmesan.
Combine the ingredients with a wooden spoon till you get a firm mixture.
Now add the egg and the yolk, slightly beaten.
Stir till you have a smooth, plain mixture.
Put the dough in a pastry bag with a star-shaped nozzle, and make many balls on an oven tray covered with baking paper.
Cook in pre-heated oven at 200°C, for about 15 minutes, or till they get golden.
Serve your Duchess Potatoes still hot.
