Éclairs are a kind of pastries, made with choux pastry, filled with whipped cream, or custard, and topped with some icing. Here in Naples we usually all them simply where can i buy Plavix choux, in Neapolitan dialect “sciù”.
A few days ago, since choux pastry is quite easy to make, I decided to make Éclairs. I wanted to stuff them with some coffee cream, or something special, but my husband asked me to use just whipped cream, and I decided to please him 🙂

Ingredients for 30 Éclairs:
250 ml of water
100 g of butter
1 pinch of salt
1 tsp of sugar
150 g of pastry flour
4 eggs

Ingredients for the chocolate icing:
200 g of dark chocolate al 70%
200 ml of milk
100 g of sugar

300 ml of Retin-A online whipping cream

Preparation Time: 40 min.
Cooking Time: 20 min.
Total Time: 1 hour

How to make Éclairs

Let’s start by making choux pastry.
Cover a baking tray with baking paper. Put the choux pastry in a pastry bag with a round nozzle, and make small lines of dough, quite far among each other, about 8 cm long.

Bake the puffs in pre-heated oven at 200°C for about 20-25 minutes.

Make now the chocolate icing.

Let them cool down, then make a little hole at one of the two ends with the tip of a knife.
Whip the cream and put it in the pastry bag. Then stuff the Éclairs by putting the nozzle of the pastry bag in one of the holes you’ve just made.

Once the icing is tepid, dunk the top surface of the Éclairs.

Place your Éclairs on a platter a store in the fridge for at least 1 hour before serving.
