Focaccia Dough is quite similar to pizza dough: just a pinch of extra yeast, and some sparkling water to have a softer dough. I’ve taken this recipe from the Encyclopedia of Italian Cuisine, and I think it’s really outstanding 🙂

Ingredients for 1 oven pan:
treatment of depression 350 g of pastry flour Heart Disease
12 g of baker’s yeast
1 tsp of salt
heap Combivent 150 ml of sparkling water
100 ml of water
5 tbsp of extra-virgin olive oil
course salt

Preparation Time: 20 min.
Baking Time: 20 min.
Total Time: 40 min. + 1 hour and 30 min. for rising

How to make Focaccia Dough

Dissolve the yeast in the tepid water. Mound the flour, make a well in the middle and pour inside the water.

Once the dough will be plain and smooth, add the fine salt and 2 tablespoons of oil (out of your 5 tbsp). Knear for a few more minutes, then make a ball and put it on the floured pastry board.


Cover with a clean cloth and let rise for 1 hour.


Oil an oven pan with 1 tbsp of oil. Turn the dough into the pan and press gently into a rough rectangular shape using your fingers. Use the tips of your fingers to dimple the entire top of the focaccia. Brush with the 2 last tbsp of oil, spread some coarse salt over it, and let rise for 30 more minutes.


Pre-heat the oven at 200°C. Bake for about 20-30 minutes.
