Gazpacho is a sort of cold soup made with raw vegetables, such as tomato, cucumber and bell pepper. It was first originating in the Spanish region of Andalusia, it is a simple dish I appreciated a lot when I was in Spain.
The recipe is very easy to make, you just need to blend all the ingredients together. It shoul be served very cold (some people do even add ice cubes inside!), and served with croutons. If you like Spanish cuisine or if you want to bring a colorful and fresh dish onto your table, try this recipe and let me know.
