Almond Milk is a beverage produced from infusion and grinding of almonds in water. It is highly refreshing and rich in nutrients. It has and ancient origin: the Middle Ages, when they use to drink it in Sicilian monastery, during Lent. Then it spread over Iberian peninsula and Asia, and finally around the world. It is mostly appreciated in Southern Italy, where we use it as a summer refreshing drink, but also to make granitas, to flavor coffee, or even to make yummy desserts. As regards its nutrition facts, it is quite nourishing (about 51 kcal per 100 g.) and rich in glucide. It also has a considerable content of antioxidant, above all vitamin E.
