Recipes with Sour Cherries in Syrup are many, and much appreciated, both by kids and adults.
To make them, you just need pitted sour cherries and sugar, in the same quantity, and some alcohol, if you need to store them for a long time.
You must wash them thoroughly, then pit them and take the stems off. Put them in a pot with sugar. Cook on a low heat untill sugar will be dissolved. Bring it to a point of boil, cook for 5-10 more minutes, then turn the gas off. Let it rest for at least 1 day.
Then, drain sour cherries with a perforated spoon, then bring the syrup to a point of boil. Now you can combine again syrup and sour cherries. Let rest for another day. The next day, repeat this same step.
After these three days, you can sterilize the pots (put them in the oven at 100°C for 10 minutes. NOw drain the sour cherries, full the pots with them, then cover with the syrup. Now, if you want to, you can add 1 spoon of alcohol for each pot, to help storing them longer.
Fun fact: once finished filling the pots, you can use the remaining syrup to make amazing desserts!
