Total Time: 1 hour + 30 min. to refrigerate the shortcrust pastry
Let’s start by making the pastry dough.
Put a mound of flour in the centre of a working surface, make a well in the middle and pour inside sugar, butter in pieces, eggs, the grated lemon zest, and baking powder.
< Knead quickly the ingredients with your fingertips. When ready, make a ball.
Cover the dough ball with plastic wrap and refrigerate for at least 30 minutes.
Then roll out your pastry dough evenly (about 4 mm thick).
Put the base of your pie in a buttered pie pan. Level the edges, then cover it with the jam.
With a practical crimper pasta cutting wheel, cut some pastry stripes and lay them over the jam.
By means of a fork, seal the edges of your stripes and the base of the pie.
Bake the pie at 180°C for 40 minutes, or until the pastry is nicely golden brown.
Let your Jam Pie cool down before serving it in slices.
