I use to make Lemon Seitan Scallopini when I don’t want to cook meat but I desire to eat something similar 😉 You can really eat seitan in thousands ways, and these scallopini were really good, both Ivano and I liked it. In a large non-sticky pan, melt a knob of margarine with chopped rosemary.
Thinly slice seitan.
Combine starch and salt in a dish, and pass seitan slices into it.
Add seitan into the pan and let brown, about 1 minute per side.
Finally add juice and grated zest of lemon, and let simmer to get a thicker sauce.
