I don’t use to cook fish as often as I wish, because my boyfriend doesn’t like it, and I don’t like when we eat differently, so I usually mortify my passion, alas! But today I’ve found a nice compromise… I’ve made Musky Octopus with Potatoes for me, and Potato Salad for him 😉 And still, how can he not love fish?! Meh!
Preparation Time: 10 min.
Cooking Time: 40 min.
Total Time: 50 min.
Clean and wash musky octopuses under fresh running water (I used frozen octopuses, already cleaned).
Wash potatoes and cook them in a large pot of boiling salted water.
Meanwhile, season a second large pot of water with wine, garlic, and lemon juice. Bring it to a point of boil.
Add in musky octopuses and cook, with lid on, for 20-30 minutes, or till they will be tender if you stick a fork inside.
Once ready, drain them and put them aside.
As soon as potatoes are ready, peel and slice them, add some salt and place on a platter.
Now add musky octopuses onto the potatoes.
In a little bowl, make an emulsion with a couple of tablespoon of oil, juice of 1/2 lemon, salt, freshly ground black pepper, and chopped fresh parsley.
Spread the emulsion onto Musky Octopus with Potatoes and serve.
