Pasta with Beans and Mussels is a typical Neapolitan dish I made a while ago with some mussels my dad had caught. It is a simple but really yummy dish, and despite the odd combination of legumes and seafood, at my home everybody appreciate it, even my husband, who doesn’t properly love fish dishes 😉 Pasta with Beans and Mussels is amongst those dishes I rather make at home and not order at a restaurant, because they often serve it soupy, whilst it should actually be served creamy!
Have a nice Wednesday, and, for those who asked for it, after the recipe I’ve added a pic of my baby-to-be bedroom… The more I look at it, the less I can wait for the month of August to pass, so that I will be able to hold my baby, at last :°)

Ingredients for 4 servings:
200 g of dried beans
200 g of mixed pasta shape
1 kg of mussels
100 g of cherry tomatoes
1 clove of garlic
parsley
black pepper
evo oil

Preparation Time: 30 min.
Cooking Time: 1 hour and 30 min.
Total Time: order diflucan 2 hours

How to make Pasta with Beans and Mussels

First and foremost, you should soak the beans in fresh water for about 12 hours.

Drain the beans and cook them for about 1 hours.

Clean the mussels by washing them under running water while striking them against each other in order to clean the shells. Draw away the beard emerging from the mussels’ shell.
Cook in a pan, with a lid on, for a 5/10 minutes, until they will open.

Drain their water, and put it aside. Shell the musseld (but some of them, so you can later decorate the dish).

Pan-fry the garlic in a large saucepan, the add the diced tomatoes, and let cook for a few minutes.

Take away the garlic, and add the beans, with some of their cooking water.

After a dozen minutes, also add mussels’ cooking water. Bring to a point of boil, then put inside the pasta.

Halfway (check on your pasta package), add the shelled mussels, stir, and finish to cook.

Turn the gas off, add to your Pasta with Beans and Mussels some chopped parsley and freshly ground pepper (and, if needed, some salt too).

Serve Pasta with Beans and Mussels by garnishing with the mussels you’ve put aside, and some fresh parsley.
