With the first green beans of the season I’ve made this Potato, Egg and Green Bean Salad to have a fresh and complete meal to bring to the office. Since the weather is so hot, these days, I’m making above alla fresh dishes, and the new ingredients in seaso anre inspiring me plenty of new recipes to try: you’ll see them on the blog in the next days!

Preparation Time: 10 min.
Cooking Time: 40 min.
Total Time: 50 min.
Wash potatoes and cook them for 40 minutes in a large pot of boiling salted water.
Clean the greenbeans by cutting off the two tips, then cook them for 10 minutes in a pot of boiling salted water.
Hard-boil the eggs.
Peel and dice potatoes.
Put potatoes and green beans in a salad bowl, season with a marinade made with oil, salt, pepper, and chopped garlic and parsley.
Shell the hard-boiled eggs, Slice in 4 parts and place onto the salad. Now serve your Potato, Egg and Green Bean Salad.
