When I talk about Preserves, I mainly refer to preserving foon in pots. Since ancient times man has been trying to preserve food by drying it. Then we passed to smoking and salting food, and finally to the use of vinegar, brine and at last sugar as well.
So by the term “Preserves” I mean marmelade, jam, products in oil, pickles… both raw or cooked.
That’s because, besides marmelades and jams, the main Preserves of Italian tradition are, for example, eggplants in oil, artichokes in oil, sun-dried tomatoes in oil… Here you will find the recipes to make at home some of these products.
