Rococo Cookies are amongst typical Neapolitan pastries. Ring-shaped like a flat doughnut, of about 10 cm diameter, made up with almonds, citruses and plenty of spices (pisto order Aciclovir online ) giving its unique flavor, Rococo is a quite hard cookie, unless you soak it in sparkling wine or limoncello.
This is the recipe we use at my home to make Rococo Cookies at Christmas time, and it is a great recipe: try and then tell me 😛
Ingredients for 25 Rococo Cookies:
450 g of sugar
500 g of pastry flour
200 g order Cytotec online of almonds
1/2 tsp of ammonium bicarbonate
25 g of pisto (a mixture of various spices: cinnamon, cloves, cilantro, star anise, and nutmeg)
75 ml of water
75 ml of orange juice
Preparation Time: 30 min.
Baking Time: 30 min.
Total Time: 1 hour
Chop the almonds, and grate the lemon zest.
Chop the zest of the 2 oranges in very small pieces. Combine water and orange juice.
Mound the flour, make a well in the middle and put inside sugar, almonds, lemon zest, ammonium bicarbonate, and pisto.
Start to blend the ingredients, slowly stirring in the orange juice.
Amalgamate the mixture till you get a soft but compact dough, then add the orange zest.
Start to make the ring-shapes.
Cover with baking paper the baking tray, and put the Rococo Cookies over it, quite far from each other.
Brushe them with the beated egg.
Bake at 150°C for 30 minutes.
As soon as you take them out of the oven, they will be quite soft, but they will get teir typical cruncy consistency as they get colder. Let cool down befor taking them away from the baking tray.
