After Lemon Curd, I had to make Scones, a typical British pastry, similar to a brioche bun. They are ideal for cream tea, breakfast or brunch.
They are usually served with butter and jam, or, of course, with Lemon Curd.
There are many variants: they can be plain, or with chocolate chips, or currants… they can even be savory! I made them with raisin, accompanied by some Lemon Curd, and they’re delicious!
Next time, I’ll made the savory version, as they were much appreciated and… they are also super-quick and easy to make!

Ingredients for 12 Scones:
260 g of pastry flour
150 ml of milk
90 g of raisin
50 g of butter
1 tbsp of baking powder
1 tbsp of sugar
1 pinch of salt

Preparation Time: 20 min
Baking Time: 20 min
Total Time: 40 min

Sift the flour, then stir in baking powder, sugar and salt.

Add soft butter in pieces and work with your fingertips. Then add in the raisin.

Now pour milk inside and work with a fork.

Work quickly by hand, till you get a soft and unsticky dough.

Roll it out on a floured pastry board till 1 cm thick, then cut it with a round cutter.

Place your Scones on an oven tray covered with baking paper, quite far from each other.

Beat the egg and brush them.

Bake in pre-heated oven at 200°C for 15-20 minutes or till slightly golden.

Take out of the oven and let cool for a while.

Serve tepid, with some marmellata, miele o la Lemon Curd.
