Goodmorning! Today in Italy we celebrate Mother’s day. So, today’s recipe is: Soft Pie with Strawberry Curd, a pie with a soft crust, stuffed with a mascarpone cream and decorated with a strawberry curd. I dedicate it to all the mothers who follow my blog!
I took the idea from my FB group, The base yogurt crust is by Chiara, mascarpone cream is mine, strawberry curd is by another girl (I’m sorry, I cannot remember her name) who first shared the recipe in the group 😉
If you’re still unsure about the dessert to make today for Mother’s Day, this recie could be helpful, it will definitely make a good impression on your table!
Today no dessert for me, we’ve decided to spend a couple of days in Cilento in order to be able to breath some pure air, bring Elisa to the seaside and taste some Cilento’s specialities, starting from mozzarella (Vannulo’s, of course) (Vannulo is a famous buffalo cheese factory in Cilento) and warm bread with evo oil, Ramarà by Piero Matarazzo, my favorite evo oil!
So I leave you to the recipe to make this sweet, sweet strawberry pie and go on with my gastronomic tour.

Ingredients for a 28-cm tart pan:
Ingredients for the soft crust:
3 eggs
120 g of sugar
125 gr of yugurt
120 gr of pastry flour
1 tsp of baking powder Order Natrexone
1 tsp of vanilla essence

Ingredients for the mascarpone cream:
250 gr of mascarpone buy Disulfiram
100 gr of white chocolate

Ingredienti per la crema alle fragole:
80 gr of corn starch
150 ml treatment of bipolar disorder of water
200 gr of sugar
500 gr of strawberries
1 tsp of vanilla essence

Preparation Time: 30 min
Baking Time: 20 min
Total Time: 50 min + 2 hours in the fridge

How to make Soft Pie with Strawberry Curd

Montate le uova con lo zucchero a massima velocità, dovranno risultare gonfie e spumose.

Aggiungete lo yogurt, la vaniglia e la farina setacciata con il lievito.

Montate fino ad ottenere un impasto omogeneo

Versate nello stampo “furbo” ( uno stampo per crostate con la base leggermente scanalata) imburrato e infarinato. Cuocete in forno a 170° per circa 20 minuti.

Sfornate e lasciate raffreddare

Nel frattempo preparate la crema alle fragole:
Lavate le fragole, eliminate loro il picciolo e frullatele

Poi mettetele in un pentolino con acqua, maizena, zucchero e vaniglia e mescolate

Mettete il composto sul fuoco e cuocete finché non si è addensata. Una volta pronta, lasciatela raffreddare.

Preparate la crema al mascarpone. Fate sciogliere il cioccolato bianco, una volta fuso, mettetelo in una ciotola insieme al mascarpone e lavorate fino ad ottenere una crema

Andiamo ora ad assemblare la torta.
Spalmare la crema al mascarpone sulla base

Poi mettete la crema alle fragole in una siringa per dolci e create dei ciuffetti di crema su tutta la superficie del dolce.

Mettete la torta morbida alle fragole in frigo a riposare per un’ora prima di servirla
