Spaghetti with Clams, another classic recipe of Neapolitan cuisine.
We have different ways to make it. The dressing can be plain (wit no tomatoes) or with a few cherry tomatoes. You can pan-fry clams with garlic, oil and red pepper, or make them open by means of steam and then add them to the fried garlic. You can make it with carpet shell clams, or with rayed artemis.
At my home we usually make it on Christmas Eve, but it is an amazing dish, and you can make it whenever you want. It is a very easy and quick recipe. Spaghetti with Clams always remind me the aroma of the sea: I actually passed a fish shop while I was doing my shopping, and I let myself be tempted by this sea food, so I decided to make spaghetti right away 😉
Preparation Time: 20 min.
Cooking Time: 20 min.
Total Time: 40 min. + 1 hour for clam purging
Pan-fry in extra-virgin olive oil garlic and some hot pepper.
Drain the clams, add them to the oil and let them cook on high heat, with a lid, for a few minutes.
Let them cook in this way until they open.
Shell half of them, putting the rest aside, so you can later decorate your dishes.
Cook the pasta (see the guide): put a large pot of salted water on to boil, with 1 Tbsp of salt for every 2 quarts of water. When the water comes to a boil, add the pasta and cook, uncovered, at a rolling boil, following the cooking time reported on its package. Drain the pasta “al dente” (it must be still a little firm, not mushy) and saute it in the pan, adding black pepper and chopped parsley.
Serve your Spaghetti with Clams decorating with the sea food you put aside.
