Sweet Crust Pastry (or sweet shortcrust pastry) is the leading base to make sweet pies, tarts and cookies. My mom’s recipe is unequalled as regards refinement and friability. Of course there are countless recipes, as you can combine the base ingredients in countless different ways, according to your taste. I like Sweetcrust Pastry made in this way, with a pinch of baking powder to make it even more friable.
One tip: don’t knead too long with your fingertips, or you’ll melt the butter and it’ll get much more difficult to handle.

300 g of pastry flour

How to make Sweetcrust Pastry

Mound the flour, make a well and put inside sugar, butter in pieces, eggs, lemon zest and baking powder.

Quickly amalgamate the ingredients with your fingertips.

Keep kneading till you get a plain and smooth dough.

Cover with some plaistc wrap and refrigerate it.

P.S. If your Sweetcrust Pastry curdles, that is it breaks into crumbs, just add some cold water or a half yolk to recover it.
