Last week I was about to make classic pasta and peas, when, while leafing through a cooking magazine, I saw the recipe to make tagliatelle with taleggio and green pea puree… So I stored pancetta back in the fridge, and run to buy some taleggio, instead, in order to try the new recipe. The puree was really good, and the three of us could have the same dish 😉

Ingredients for 4 servings:
500 g of tagliatelle
300 g of green peas
purchase Disulfiram 150 g of taleggio or other semi-soft cheese
100 ml of milk
20 g Xenical 120 mg of parmesan
20 g of butter
salt
black pepper

Preparation Time: 10 min.
Cooking Time: 30 min.
Total Time: 40 min.

How to make Tagliatelle with Green Pea Puree

Boil peas in salted water for a dozen minutes.

Blend half of your peas, together with taleggio, milk, parmesan, salt and pepper.

You’ll get a peas puree.

Cook the remaining peas in a pan with a knob of butter.

Cook tagliatelle in a large pot full with hot-boiling salted water, drain when still firm, and add them into the pan with peas.
Also add taleggio and peas puree.

Cook on a high heat for a couple of minutes, while stirring to combine.

Serve.
