This Tzatziki Potato Salad is one of my favorite salads. Tzatziki, a typical Greek dressing, makes Potato Salad ideal as a single course or a side dish. This is a fresh and light dish, perfect for these days 🙂
Preparation Time: 30 min.
Cooking Time: 30 min.
Total Time: 1 hour + 2 hours in the fridge
Boil potatoes in a large pot of salted water.
Meanwhile, wash and grate the (unpeeled) cucumbers (I left a part diced). Sprinkle them with some salt, and let drain.
Peel and chop the garlic. Chop the mint too.
Combine cucumbers, garlic, mint, salt, pepper, and one tablespoon of oil, then add the yogurt. You will get a creamy buth quite thick mixture.
Let rest in the fridge for at least 1 hour, so that the flavors will combine fine.
Peel the potatoes, dice them and let them cool down.
Combine potatoes and tzatziki and let rest in the fridge for at least 1 hour before serving.
Garnish with some cucumber slices and some mint leaves, and serve.
