Today I propose you the recipe to make Whole-Wheat Quick Bread. It’s a high-hydration dough that you can make with just a bowl and a wooden spoon in only 2 hours. This is a variant of this recipe, that I posted a while ago and that is always appreciated by everybody… many of you has asked if a version with whole-wheat flour is possible, so… here it is!
If ypu want to make bread at home for lunch, you may start now and bring hot bread onto your table in two hours: you just need a bowl and a wooden spoon!

Preparation Time: 10 min
Baking Time: 25 min
Total Time: 35 min + 1 hour and 30 min for rising
Dissolve yeast and malt into 50 ml (out of the total amount).
Combine the two flours in a bowl, then make a well in the middle and pour inside water and water with yeast, and start to combine.
Then add in salt. You’ll get a quite sticky and limp dough.
Generously spread the surface with some flour. Cover the bowl with a clean cloth, and let rise for 1 hour and 30 minutes .
With a help of a spatula, move the dough onto the oven tray covered with baking paper. Take care that the floured part of dough is upwards.
Divide dough into 3 loaves.
Space them out a little.
Bake in oven preheated at 230°C for about 25 minuti.
Let cool down and serve.
