A few days ago, I made Zucchini Bacon Baked Rice for dinner: after making parmesan risotto for Elisa, I used the remaining risotto to make something fancier for Ivano and me.
You can also make this baked rice in advance and bake it at the last moment.
Well, guys, today I’m in a rush: tomorrow I’m going to Diletta’s wedding (she is one of the girls who work with me, the one of the bachelorette party cake), so I have to close the week, and also plan next week, within today.

Ingredients for 4 servings:
250 g of rice
70 g of butter
order vardenfil 1/2 glass of white wine
1 l of meat stock
50 g of parmesan
80 g of bacon
150 g of mozzarella

Preparation Time: 30 min
Cooking Time: 30 min
Total Time: 1 ora
Chop onion and let it wilt in a saucepan, together with 50 g of butter.
Add rice and cook for 1-2 minutes.
Add more stock as it is absorbed.
Once ready, take out of the gas and stir in the remaining butter and the parmesan.
Slice zucchini and grill on a hot plate.
Roast bacon slices in a pan.
Cover a (25×10 cm) loaf pan with baking paper and then with slices of zucchini and bacon, alternated.
place inside half rice, then add mozzarella in pieces.
Cover with the reamining rice, then “close” wth zucchini and bacon slices, alternated.
Bake for about 10 minutes at 200°C: just time to melt mozzarella.
Then turn it upside down on a platter, and serve.
